This wine is obtained from grapes partially dried in “fruttai” (temperature and humidity controlled drying rooms) for 100 to 120 days, after which complete fermentation of the sugars is permitted. It is one of the most longevous of all the great Italian wines.
It has a very intense red color with notes of garnet, and an aroma reminiscent of dried fruits, tobacco and spices, thanks to the noble rot formed during the drying process. The taste is very fruity with a strong aroma: dry but very smooth, with a full body that is refreshingly warm and vigorous; it has a strong character and can be aged in the bottle for over twenty years.
Because of these characteristics it pairs well with meat dishes, wild game, and aged cheeses, but can also be enjoyed alone as a sipping wine (“vino da meditazione”)" (From the regulations concerning the production of Amarone della Valpolicella DOCG).
