Valpolicella Ripasso DOC
Classico Superiore

This wine is obtained when a batch of regular Valpolicella is placed in a cask containing the pomace left over from the production of Amarone della Valpolicella for 15 to 20 days. This results in a wine with the characteristics of greater structure and longevity than regular Valpolicella: a higher alcohol content, lower acidity, more roundness, more extract and a higher phenolic content. 

It has a ruby red color with garnet reflections, a lightly ethereal and red-berrylike aroma with a hint of vanilla, and a refined, aromatic, dry and velvety taste.

Due to its pleasant characteristics it pairs well with winter entrées, cured meats, and cheeses aged less than six months" (From the regulations concerning the production of Valpolicella Ripasso DOC).
